The Brownie Recipe I'm Always Asked For

If there is one thing I know will disappear from a dessert table, it’s a brownie. 🍫
I’ve made a lot of cakes over the years, but brownies are probably one of the things I get the most feedback on. They are always one of the first things to go from my dessert tables. People come back for another one. Guests ask who made them. And I’ve had more than one person tell me that they need the recipe.
So, after keeping it to myself for quite a while, I’ve decided to share it. My perfect fudgy brownie recipe is now available as a free download. ❤️
But what actually makes a good brownie?
This is where I think brownies can be a little controversial.
Some people love a really cakey brownie. Personally? No. If I’m having a brownie, I want it rich, chocolatey and fudgy in the middle. I want that slightly chewy edge, that gorgeous thin skin on top and a middle that still has a little bit of softness to it.
Not dry. Not crumbly. And definitely not something that tastes like a chocolate sponge cake cut into squares.

And I think that is probably the biggest brownie problem people have when making them at home. You bake them too long.
It is so tempting to look in the oven and think, that doesn’t look done yet. But brownies are one of those things where you actually have to trust the wobble. The edges should be set, but the middle should still have that little wobble when they come out of the oven. They continue to set as they cool, and that is what gives you that lovely fudgy texture. Bake them until the whole thing is completely firm and you’ve gone too far.
The other mistake? Rushing the eggs and sugar. This is probably the most important part of my recipe and, honestly, the bit I think makes the biggest difference. I mix my eggs and golden caster sugar for 5 to 7 minutes until they are really light and fluffy.
And yes, it feels like a long time when you’re standing there waiting for your mixer to do its thing. But don’t skip it. This is what helps give the brownies that beautiful delicate skin on top while still keeping the inside rich and fudgy.
Once you’ve got that lovely airy mixture, the rest is about being gentle. The chocolate and butter are folded through, followed by the cocoa and flour, and then whatever chocolate you fancy adding. I use white and milk chocolate in my triple chocolate version because, well… why have one chocolate when you can have three? 😂
Why I love these brownies for wedding dessert tables
Brownies are one of my favourite things to include on a dessert table because they are just so easy to love.
Not everyone wants another slice of cake after dinner. But offer them a little fudgy chocolate brownie and suddenly everyone has room.

They’re also brilliant alongside other desserts because they bring something completely different. You can have cakes, cookies, fruit, meringues and all sorts of pretty little treats, but there is something about a tray of rich chocolate brownies that makes people head straight for them. And I genuinely get amazing feedback on mine — they are often one of the first things to disappear.
And I’m not the only one who thinks they’re good… The funniest thing is that quite a few of my friends now use this recipe too. I’ve shared it with them over the years and they’ve gone on to make it themselves, which is probably the biggest compliment really. When people keep coming back to the same recipe, you know you’ve got a good one. So I thought, why not share it properly?
Make them your own
The recipe I’ve shared is my triple chocolate brownie, but the base is really easy to make your own.
You can add your favourite chocolate, nuts, caramel pieces, a sprinkle of sea salt or whatever else you fancy. Or just leave them as they are — there is absolutely nothing wrong with a really good, rich chocolate brownie without anything fancy added.

And if you’re making them for a dessert table, you can cut them into smaller squares so people can grab one alongside all the other treats. Just be warned… you might want to make more than one batch.
